Kendra mentioned to me today that she was in the mood for something with mango in it. Something chilled. Something that was a cookie, but in ice cream form, like the analog to an ice cream cake. It inspired me, and here was the result:
Take whipping cream. Add sugar, mango nectar, and unflavored gelatin. Whip. Put a ginger snap on the bottom of a plastic cup. Cover with cream/gelatin mix. Freeze. Dip in melted chocolate and freeze again.
They're pretty amazing. More mango nectar next time. The chocolate was a little overwhelming, so next time I think I'm just going to add a chocolate layer instead of covering the whole thing.
