I'm not sure that the person who knows best your limits is yourself. I've found out that there were dozens of things I would never have done my self, but with a little push from someone else ended up doing, and it turned out well. That's mostly when it comes to sports though. That's why you have "coaches" to help you go beyond what you thought were your limits.
I am definitely a control freak.. And there are only two circumstances when I'm ok with losing control : when I know the end won't be different than planned, and when I trust enough someone to be in charge. The end in travel meaning I'll be able to take my plane back home, or my train, or whatever. I'll be home. That's what matters. If I have to spend hours waiting for something, chances are I'll have managed beforehand to organize things so it won't make a difference in the end. For example, I won't plan to go some place the same day I leave, even if my plane is late in the evening, if there is any chance something will go wrong. It also mean that I spend a lot of time in airports ! lol ! And trusting someone else to be in charge.. well that can be a coach I paid (like for horse riding lessons), but there has to be a certain "connection" between us both. If I don't like something, I'll just leave.
I suspect tho what I'm thinking of is the difference between a 'hard' limit and a 'soft' limit, in the sense that often those 'soft' limits do need to be gently pushed. It's like ... I have a 'soft' limit of putting my face in water. I don't like it. But I've done it. And I'm sure that with more eager encouragement, someone will one day get me to to do it again. But I have a 'hard limit' of bungee jumping; I will never do it, regardless of other people's suggestions/encouragement.
With regard to travel, I have to trust the driver enough to be in charge of their vehicle, and that we will get to the end of the journey in the right place as planned, regardless of what happens on the journey, so I guess in that respect we're not really that different. That said, I'm more ... casual with regard to transportation connections. Although only in places with defined timetables - I wouldn't risk a connecting flight that relies on a minibus in Benin getting to Cotonou on time!
