Small victories...

On a whim I made a somewhat-fancier-than-usual (but surprisingly easy) supper tonight, and Chris proclaimed it the best meal I've ever made.
Of course, I'm extremely happy to hear such praise from the resident non-foodie, though now I suspect I'll have to suppress a twinge of guilt every so often, wondering how well my other cooking meets his standards.
[It really was straightforward though. I made my reliable gluten-free flatbread, changing the flours a bit and adding dried rosemary, thyme, "Italian herb mix" and black pepper to make it more focaccia-like. While that was baking I also roasted a peeled head of garlic and mixed up a spread from chopped pickled artichokes and soft goat cheese which I put in the oven to heat. Steamed asparagus topped with a few walnut chunks went onto plates along with sliced fresh tomatoes, then big pieces of the fresh warm bread; garlic cloves were divided between the plates and a mixture of olive oil and balsamic vinegar drizzled over everything, with the hot dish of artichoke cheese between us to share. Yum!]
