I finally made the commitment to myself to become an ovo vegetarian ...again. (i used to be vegetarian, and vegan prior to that). right now--no dairy, or meat, and only the whites of eggs. this is a health decision more than the animal rights decision that it used to be. i have IBS and it's pretty severe. there are so many trigger foods, it almost seems impossible to eat ANYTHING. but thanks to Heather Van Vorus' book, Eating for IBS: 175 Delicious, Nutritious, Low-Fat, Low-Residue Recipes to Stabilize the Touchiest Tummy, i can live like normal again. sort of. i would do a commercial for her! there are actually foods i can eat, i just have to take the time to make them. today i made a mexican egg white omelet with spices, tomatoes, avocado, spinach, and cilantro. it was amazing and yummy and i made 4 extras that i froze for breakfasts. all i have to do is put it in the toaster oven with a slice of soy cheese. i'm really excited!!!

next, i'm making rice pudding with vanilla soy milk and lemon zest :D
