Between you and me, some of these ships could really use a psychologist. *eyes the Victoria II* However, I've already spoken to one of the captains on a similar matter and they decided it would be unfair to create brand-new positions whenever someone requests it.
What you can do instead is to sign up for an open position and say that your character does a little of both. In the psychologist example, if the character knew at least a little first-aid, he'd be great for a Doctor. There's also the option of picking the Seaman position and assuming that your character acts as a psychologist instead of doing heavy work. Third, you could put someone as a passenger on a ship and say that they use their skills to pay their way along.
As for your second question, yes, there are most definitely pistols and other sorts of guns in this setting!

What about being a regular passenger of the Winding Way who knows that they are looting, but plays along? I'm thinking that Joshua would, say, play games of poker (sob I still don't know how to play) before/after the performances and split his winnings with the crew after? Like, he's not really a part of the crew, but on good terms with them? orz
I asked the WW captain about it, and they said that works out good! :) (The crew will most likely have their own private games of poker, so it sounds like Joshua will fit in just fine).

How portable are those black and white cameras? About how many pictures would I be able to take and how would I develop the photos? And uh, what do they run off?
So, to answer your question - not very portable at all. They're heavy box-cameras (like at the top of the page) that require thick tripods. They would come in cases to carry them in, but with the camera itself, you have to be very careful to not break it.
The Wiki article says the first Kodak film allowed 100 exposures, so let's go with that. As for developing it, you'd definitely need a dark room and possibly some weird equipment. There's no mention of batteries or anything in this article, and these cameras wouldn't have a flash, so it's safe to say the mechanisms don't need a power source.
I'd also like to say OH MY GOD I SEE A PRATCHETT REFERENCE in the geography section and for that this RP's awesomeness levels just shot over 9000
