After years of posting to this blog, I finally have a bit of salsa-related news to report here:
Double-dipping chips into salsa is not dirty!
According to Sunday's Parade:
A Fresh Look at Double-Dipping
Inspired by TV’s Seinfeld, Prof. Nancy Zeller of American University in Washington, D.C., tested whether double-dipping is as bad as George Costanza was led to believe. The professor and her students dipped, double-dipped, then triple-dipped chips into salsa, guacamole, soft cheese and a spinach-cream spread. Surprisingly, after one hour, the salsa and guacamole had virtually no bacteria. The two other dips, which contained dairy, had some bacteria-but not as much as Professor Zeller, a microbiologist, had expected. “Commercial dips have a fair number of preservatives,” she notes. “In this case, that may have been a good thing.”
