My version of the "cracker barrel" casserole
TWO LAYERS:
Bottom layer: hashbrown casserole layer
Mix in large bowl:
(1) 2 lb bag of hashbrowns, the shredded work better than the chunks
(1) can of cream of chicken soup (dont add water)
2 cups of shredded extra sharp cheddar cheese
1 large onion grated
Mix thoroughly, and put into a greased baking dish
Top Layer: chicken cheese broccoli casserole
3 lbs chicken breasts (either bake, poach, saute etc, cook thoroughly and cut into bit sized chunks)
(1) can of cream of chicken soup (dont add water)
2 cups velveeta melted
1 lb frozen broccoli
1 sleeve ritz crackers
butter
Mix all ingredients thoroughly in bowl. Spread over the hashbrown casserole...top with crushed ritz crackers (dont overcrush, leave in big pieces) SHRED frozen butter to top crackers...dont over do it.
Bake in 350 oven for about 20-25 minutes till bubbling and crisping on top. Definately NOT a healthy meal...but soooo good. Serve with homemade scratch biscuits and country gravy if you dare!
