GINTAMA. YOU DO NOT NEED A PLOT TO ENJOY SUCH AN AWESOME SERIES. Gintama is seriously underrated and something special! Really, the plot is about Gintoki, Shinpachi, and Kagura taking random jobs so that they can pay their rent. It ranges from LOL FUNNY to drama. And it's action packed in the weirdest ways.
For the anime, it gets more interesting around episode 20, and they start to have arcs around the 30s. It will certainly keep you busy. There are about 200 episodes, and you will definitely not regret watching it.

Nabari - It's a good series. Starts straying off from the original storyline in the last arc or something.
Pandora Hearts - When I started reading it when it got popular, it had a good storyline. I'm seriously behind though.
07 Ghost - What can you expect from chicks who wrote a ton of SasuNaru doujinshi? ALSKDJF I still love the series anyways. It's pretty good...lots of odd drama imo.
Soul Eater - Manga's great! But I liked anime as well~ I believe it started having its own story around...after the last Excalibur episode with Hero in it. Poor kid.
