It's the middle of finals season and I'm dying here. Usually I crave junk food but this time for some reason I've been really wanting Indian food. Unfortunately, Aarti only makes spinach soup (I'm sure there's an actual name to the dish but I have no idea what it is. It's pureed boiled spinach with various spices...so I'm calling it spinach soup) which means I must venture into the world of curry all by my lonesome.

And since I figured this is probably like the Indian version of stir-fry, I went into it without a recipe, thinking that I could just throw whatever into a pot.

hmmm, not so much.

This is what I used:

-1 large chicken breast (haven't gone grocery shopping for the past 2.5 weeks....)
-0.5 onion
-2 Idaho potatoes
-8 garlic cloves (I firmly believe that you can never have enough garlic; the taste gets cooked right out of them so you can always add more. I would've too if I hadn't gotten impatient with all the peeling.)
-3 Tbsp curry powder
-1 tsp cinnamon
-bay leaf
-1 Tbsp cayenne pepper
-milk

See, the spices is where things kind of got out of hand. I really didn't know what to add and all that jazz so I just kept putting things in until the color looked about right. So yes, the amounts used are total approximations. Apparently that's not how it works. Shocking! And it was getting too watery so I threw in some potatoes...you know, 'cause starch thickens things up.

So afterwards I decided to finally look up some recipes. It appears as though I may have used about 6 times too much curry powder and the cayenne pepper wasn't necessary at all. I had thought it was too yellow and needed some red pigments so I just threw some in there. hmm...no wonder my mouth is completely numb right now.

Oh well, lesson learned. You'd think I would've remembered from the whole mini-pot pies fiasco from earlier this semester but homeostasis has burned my brain. That'll be another rant for another day (probably after I get my grades back).
