AH! I just realized Thanksgiving is next Thursday. We are so NOT prepared to host Thanksgiving dinner...I haven't even come up w/ what to serve yet...other than the turkey of course.
I'm curious...what do other families eat on Thanksgiving?

I usually google for recipes and alter them to fit my needs. Sometimes I get them from friends or cooking communities on LJ, or even just plain improvise.

I'm kind of on your boat, and wanted to do some new things this year, but in case you're interested, this is the tried-and-true stuffing recipe I've used for every Thanksgiving past:
Corn Bread Stuffing
-Corn Bread-
4 boxes Jiffy Cornbread Mix
4 eggs
1 1/3 cup milk
-Stuffing-
1-2 chopped onions
2 stalks celery, chopped
2 eggs
1 tbsp poultry seasoning (may substitute with herbs: rosemary, thyme, sage)
2 cans chicken broth
touches of parsley (optional), salt, and pepper
Directions:
1. Bake cornbread mix according to instructions on the box
2. Sautee onions and celery
3. Crumble cornbread and mix with onions/celery into a huge baking dish.
4. Let cool for a few minutes
5. Add 2 eggs, poultry seasoning, chicken broth, parsley, salt, and pepper.
6. Bake at 350 degrees for 35-40 min
Yields enough stuffing for at least 12 people. Might want to halve the recipe!
