Sn0wy Dark Ch0c0late C0okies

This is my own recipe! Modified from a few others of course. I was amazed on how nice it turned out eventually. Still, I prefer my cookies made with the chocolate shavings. Haha. These were made from melted chocolate.

1 stick of unsalted butter
4 ounces (1/2 cup) of unsweetened chocolate (cooking chocolate), chopped
1 and 3/4 of castor sugar
1 and 1/2 cups plain flour
1/2 cup of cocoa powder
1 teaspoon of baking soda
A pinch of salt
3 large eggs, beaten
1 cup icing sugar for dusting
Step 1: Heat butter and chocolate over medium heat. Stir until smooth and let it cool for ten minutes after that.
Step 2: Meanwhile, preheat the oven to 180*C (350*F). Line two large cookie sheets with parchment paper, or oil your cookie tray so that your cookies can come off after baking.
Step 3: In a large bowl, mix together sifted flour, sifted cocoa powder, castor sugar, baking soda and a pinch of salt.
Step 4: Whisk eggs into butter mixture, then fold in the dry ingredients till incorporated.
Step 5: Roll into balls and place on the tray.
Step 6: Bake at 180*C for 14-17 minutes

Note: The original recipe actually required some finely chopped candied ginger and chocolate chips. You may mix these in if you like. You also may dust the cookies after they are done.
