Today I made quinoa burgers, inspired by my leftovers, the millet burgers my sister used to make, and a recipe I found online. I also had another go at making humous.
flufybumblebee made spicy salsa and his first ever falafels! We ate that all with the leftover salad I made yesterday.
I have written out rough recipes of the food made, not sure if I remembered everything or not.
Vegan Gluten Free Quinoa burgers
third of pack of Cauldron plain tofu, mashed with forked
leftover boiled quinoa (small bowl)
half cam kidney beans, mashed with fork
good few sploshes tamari (or soy sauce)
dash of vegan worcestershire sauce
loadsa cracked black pepper
1 medium onion, chopped fine
4 cloves garlic, chopped fine
1 tsp wholegrain mustard
tbsp fresh chopped coriander
2-3 tsp cumin powder
1 tsp paprika
1 and half tsp vegan egg replacer powder (to help bind)
Gram flour to coat
Method:
Fry onion turns translucent, add garlic, fry coupla mins. Mix all ingredients in a bowl. Make into patties/burgers and cover lightly with flour. Fry till browned. Mine fell apart quite a bit, but they are yummy and moist with a bit of crunch and texture.
Humous:
Same as before, but with more garlic and replacing a touch of water with a touch more olive oil (and extra virgin this time). Also when finished and in my nice storage box just the right size, a drizzle of olive oil on top and a sprinkle of paprika powder. It's better than the last batch! Yay!
Falafel (Gluten and Wheat free):
1 can of Chickpeas
5 cloves of Garlic
1 Chilli (or about a Heaped Tablespoon)
2 Tablespoons of Gram Flour (Other sorts of flour could be used instead)
The juice of half a Lime (or Lemon)
2 Tablespoons of Finely Ground Cumin Seeds or Cumin Power
1 Tablespoon of Finely Ground Coriander Seeds or Ground Coriander
A handful of Fresh Coriander
A handful of Fresh Parsley
Some Ground Black or Mixed Peppercorns
Places all ingredients in a blender or a bowl to use with a hand blender
*Remember to take the skins off the garlic*
Roll into small balls about an inch in diameter
Deep or Shallow Fry *on a Low Heat to ensure they are cook through*
When cooked they should look Golden or Dark Brown
Place or paper towel (or loo roll) to remove excess oil

Granny square as in 'Doll's Cot Cover' pattern in Patons' 'Bazaar Time' pattern booklet (an oldie inherited from my Grandma). Use one colour throughout .
5th round
1 tr. between each single tr. in previous round. 3 tr., 2ch., 3 tr. in each corner holes of previous round. Join with s.s. to top of ch. Maybe fasten off maybe do another round.
6th round:
Two trebles between each single tr. in previous round and each gap in the 'shells'.
2 shells with 2 ch. between to make corner.
*shell = 3 tr, 1/2/3 ch., 3 tr.
