When I'm stressed I like to cook. Yesterday was a super busy day and after I came home there was more homework to do so I "treated" myself by baking banana bread and making an easy cute comfort food - omurice.
Omurice! Some pseudo-Asian dish (Japanese or Korean) where fried rice is wrapped in an omlette and decorated with ketchup. I had lots left over so I made the one pictured above for my friend at school ^0^
The fried rice within :D Pretty simple..Just red bell pepper, onion, bacon, carrots, and soybeans. But tasty! If you didn't have the foresight to make Jasmine rice the day before for fried rice you can just use Japanese rice and let it cool since the grains don't seem as delicate and wouldn't turn to mush in the wok like fresh Jasmine rice would.
I followed this recipe:
http://simplyrecipes.com/recipes/banana_bread/ Mine didn't come out like the picture (perfectly browned at the top), but it was definitely cooked, and definitely delicious! I couldn't resist and had a slice - then brought it to school where it vanished in a few minutes into hungry bellies. I think banana bread is underrated! its so cheap and delicious, and not that many ingredients. I've had dry banana bread from cafes before that were not so good :\ The recipe from simplyrecipes makes really yummy and moist banana bread. I didn't use whole wheat flour like some healthy bakers do but I did use "unbleached" and cut the sugar down to 3/4 cup, with brown instead of white..
Tonight's dinner is..instant noodles with scallions and egg.. ;____;
