In my Twins book, a woman mentioned eating the Stouffer's frozen macaroni and cheese entree for lunch so I bought one and brought it into work. It was tasty, but in my head I was thinking that I could make one just as good and probably for cheaper. I've made
Patti LaBelle's macaroni and cheese multiple times and it's good, but I wanted to try a version with more upscale cheese. I printed out
Bobby Flay's version. The recipes are very different, but I was excited to try Bobby's version with the pancetta. Last night I made it and I have to say, I'm disappointed. Bobby's recipe was more work, had more cheese, but less taste. In essence, you make a bechamel sauce and I think maybe I screwed that up. My sauce wasn't as smooth as I would have liked it to be, and that definitely came through in the final product. Then again, that could just be that those cheeses aren't as melty. Plus, Bobby's version is expensive. I spent around $35 for all of the cheeses plus the pancetta. Next time, I'm going back to Patti's version. The cheeses may be more pedestrian, but the taste is better.
