Like you said, we learn SO MUCH, simply from Harry's actions alone. And even in moments before and after the instinctive arm-grabbing by Harry, we see that his attention is, though unconscious, constantly focused on Hermione the whole time they're in the DoM. Although, I also like to think his instinct to keep her close isn't only to keep her safe, but also because he NEEDS her with him, and to me, that emphasizes the fact of how much he trusts her and relys on her guidance and/or assistance in ANY situation, really.
Don't worry--I understand what you're saying. :D The need to keep her safe prompts the question of why he needs to keep her safe, especially above Ron, Neville, Luna, and Ginny, and it boils down to the fact that Harry needs Hermione badly. And this isn't just me quoting Rowling, either. :P
Anywho, I always enjoy AND appreciate your lol-tastic commentaries in addition to your lovely art. *G*
