Inventing Cookies 2

The second attempt at a "new" cookie went much better. I used some extract with the fruit and nuts let them cook a little longer. I measured the apple this time too, not just using all I had prepared.
They came out a bit sweeter, not too sweet but very satisfying after you eat one.
The recipe was also larger, more flour,whole wheat, and more oats, a full cup of walnuts and dried blueberries too.
I had several people try them, and so far everyone loves the taste(there is still one tester yet to be heard from). The comments came back from one that the consistency might be a bit dry,but they still liked the cookie. That comment came back with a suggestion too. It was suggested that I research Flax. Probably someone who might take the time to read this would know this,but it turns out that Flax is a good source of protein (something I am constantly trying to get into my diet), and can be used as part of the flour in a recipe, or as an egg substitute. Vegans have used it in place of eggs for years. So part of the refining of this cookie will be to try flax.
Another thing I might try, that I found thru reading old recipes, is to pre-cook the oats. Cooked oats magnify the oat taste in the cookie.
This has been a lot of fun and I'll post on the next attempt.
Christmas cookie time is coming on quickly so I dont know when I will have the time for inventing,but now that I have a start, I will keep at it until I really love the result. Only then will I share the complete recipe.
