cookie recipe: peanut blossoms.

I made this recipe in December but held back on posting them because I wanted to make them again. I'll make them soon, but Lord knows we have enough sweets here already. I'm very pleased with how these turned out.

Original recipe.

( the ingredients. )
1 cup shortening (I used butter)
1 cup peanut butter
1 cup packed brown sugar (I used dark)
I cup white sugar
2 eggs
1/4 cup milk (I used nonfat)
2 teaspoons vanilla extract
3 1/2 cups all-purpose flour
2 teaspoons baking soda
1 teaspoon salt
1/2 cup white sugar for decoration
2 (9 ounce) bags milk chocolate candy kisses, unwrapped

Preheat the oven to 350 degrees F, and use cooking spray or Crisco to prepare the baking sheets.

In a medium bowl, combine the flour, baking soda, and salt. Set aside.

In a large bowl, cream together the butter, peanut butter, brown sugar, and 1 cup white sugar until smooth. Beat in the eggs one at a time, and stir in the milk and vanilla. Stir the flour mixture into the peanut butter mixture until well blended. Shape tablespoonfuls of dough into balls, and roll in remaining white sugar. Place cookies 2 inches apart on the prepared cookie sheets.

Bake for 8 minutes. Remove from the oven, press a chocolate kiss into each cookie, and bake for another 2 to 4 minutes. Allow to cool for at least an hour.

Note: I followed one of the comments on the original recipe and changed the baking temperature. For a chewier cookie, use butter in place of shortening, and bake the cookies at 350 F. If you don't want chewy cookies, you might just go for 375 F and press the kisses into the cookies after baking it 10 to 12 minutes, then setting the cookies to cool.

It's possibly because I'm not a fan of Hershey's kisses, but I also followed a recommendation and used a couple Dove Promises instead of Hershey's kisses. The chocolate is more evenly distributed across the cookie and it's not Hershey's, so it's yummy.

I'm also considering making the cookies without any garnish on top. It's yummy.
