Well I don't really think that Haruhi is 1-D. There are a lot of parts to her even within what canon gives you, they are just a bit more subtle.

Her obsession with finding weird things come from the fear of being unoriginal. It's more than just a desire to have a good time, it's to prevent herself from fading into the background and being just one in six billion. Haruhi is going to fight tooth and nail to stop this from happening but she's not going to confess to many people her actual fears of being unoriginal. She's going to save it only for people she trusts and even then is unlikely to bring it up again.

Second of all, she met John Smith (aka Kyon) when she was only 12 years old. And when he told her that aliens, time travelers and ESPers, probably did exist, she changed her whole life. She decided that she needed get up and start acting, instead of waiting and hoping. Haruhi still holds to this very tightly because this event was such a turning point for her and she recognizes it. But it's a a big thing for a kid that young to change so drastically so I think that's why Haruhi appears to be very childish sometimes. She is still holding onto this event in the past while simultaneously moving forward in life and growing as a person with the SOS Brigade. A lot of her development is letting go of the past and letting herself grow outside the parameters she set for herself and becoming calmer and more whole person due to Kyon's influences, while Kyon grows to be more adventurous and spontaneous due to hers. But for the longest time, I think that she is still searching for John Smith because he was something like her first crush or the first person who ever really "understood" her. So her initial attraction to Kyon was his similarities to John Smith, obviously because they are the same person.

On Kyon, Haruhi trusts him. This is a big deal as Itsuki tends to point out. She relies a lot on Kyon's support because he was her first friend and now her crush. When Kyon is there, she knows everything will turn out well. When he withdraws his support, it shakes her. We saw this in the new season during the movie filming. She got pretty distraught and angry when Kyon stopped having her back over the movie but perked right up again with even stronger resolve when he was back on her side. Of course, it's going to take a lot for her to admit that she trusts and cares for him as much as she does.

Another thing is, Haruhi isn't completely selfish all the time. She is capable of empathy for others even if she might not exactly understand what she's feelong. She helped out the members of ENOZ simply because she understood how horrible it would be for the members not to be able to play. I think Haruhi understands people's bad situations and sort of jumps to help because that's just what she feels she must do. So when, like with ENOZ, people go to thank her, she gets rather shy and flustered because she's still not used to being thanked for things.
