i am not really feeling life today (it's so overrated sometimes) and yet as grumpy and moody as i am, my love of cooking cannot be stopped.
it's really becoming like a sickness.
for your viewing (and perhaps cooking?) pleasure, i present to you:
CURRIED BROWN RICE WITH ASPARAGUS AND TOASTED CASHEWS (VEGAN TOO!)

Ingredients:
2/3 cup whole cashews (the best of all the nuts!)
2 cups cooked brown rice
1 lb. fresh asparagus, tough ends removed, cut into one inch pieces
1 tbsp olive oil
1/4 an onion, diced
1 1/2 tsp curry powder
1/3 cup golden raisins
1 tablespoon soy sauce to taste
1. Toast the cashews on a cookie sheet in a 350 degree oven for 12 minutes. Set aside.
2. Steam the asparagus until tender
3. Meanwhilte, saute the onion in olive oil. When soft, add curry powder and saute for one minute.
4. Toss in brown rice, raisins, asparagus, and soy sauce. Cook and stir until heated through. Add a bit of water if it gets sticky. May need to add more soy sauce. Serve and top with cashews (I mistakenly added the cashews when I added everything else and it turned out just fine)
Mmmm...goes well with a glass of (soy) milk and a new episode of The Office
