yesterday i scored Vegan with a Vengeance : Over 150 Delicious, Cheap, Animal-Free Recipes That Rock from the library and spent most of the night (except for when i was watching BB7 and The Office) pouring over the recipes. so far, this is one of the best cookbooks i've ever read - vegan or not - because the author is hilarious and insightful. i love the way she writes and she has all these anecdotes scattered throughout. i like that. it really gives a book personality.
so i've selected two recipes to try out today. the first: BLUEBERRY SCONES. i must say that another reason i love this cookbook so much is that she has a whole section for muffins and scones, and then another section for cookies and bars, and then ANOTHER section for desserts. i like the way she thinks! so i am going to try out the blueberry scone recipe, and for dinner i am making black bean, mushroom, and quinoa stuffed peppers. fancy! i am also making mashed potatoes but will use soymilk instead. it will be vegan-riffic.
there is one recipe in here that i am dying to try. it is for cherry almond muffins. i am going to wait until the cherries peak around here. i saw some at the store that were $2.99 a pound, which is still kind of expensive. hopefully they will peak either before my european trip or after. imagine the horror if cherries peak while i'm away? the only solution would be to cancel the vacation.
speaking of which, i leave in 13 days. holy shiiiiiiiiiiiiiiittttttttttttttt.
well Snugs and i have a huge afternoon planned, so i must disconnect. there are scones to bake and cherries to long for. and maybe also naps to have.
