I had a fist-sized piece of pie dough left and saved it for experimentation. I rolled it out into a small quiche dish and filled it with the following mixture:
2 snack-size peach fruit cups, no sugar added kind, drained
1 Tbl sugar
1 Tbl all-purp flour
1/2 tsp ginger
dash of cinnamon
1 pat of butter
I laid another piece of dough on top, cut some vents and baked at 375 for 40 min. Pretty tasty little cobbler.
