Recipe for Coffee Cloud Cake (= My Favorite Cake Ever = My Birthday Cake In Perpetuity (now that I"ve figured out how to do it).
It's not as hard as it sounds. Bake it in an angelfood cake pan.
Coffee Cloud Cake
Dissolve 1 T instant coffee into 1 cup boiling water and let cool. Sift 2 cups flour, 3 teaspoons baking powder and ½ teaspoon salt. In a separate bowl, beat 6 egg whites, ½ teaspoon cream of tartar into soft mounds. Add ½ cup sugar to egg whites and beat until very stiff. Set aside. In another separate bowl, beat egg yolks and add gradually 1 ½ cups sugar and ½ teaspoon vanilla. Beat until thick (4-5 minutes). Add dry ingredients and coffee to yolks. Fold 1 cup of nuts (usu walnuts) and the egg white mixture into the yolk and dry ingredients mixture. Bake at 350 for 60-70 minutes. Top with 7-minute frosting or whipped cream.
7 Minute Icing
Beat 2 egg whites, 1 ½ c sugar, 5 T cold water (or coffee- I like strong coffee here), 1/4t cream of tartar, and beat constantly for 7 minutes over a double boiler. Add 1 t vanilla. Ends up making a REALLY sticky frosting at first, which eventually hardens into a sort of meringue. It's awesome. Very sixties, but still awesome.
