What's canon?! Whatever a fandom accepts as original source material, such as a book, movie, or TV episodes. Sometimes there are squabbles over novelized scripts or media tie-ins, audio dramas, deleted scenes, actor/director/writer interviews, unproduced scripts, etc.
"Fanon" is when fans invent or infer something not explicitly found in canon, exemplum gratis: Cam calling Vala "Princess" (Ben Browder did ad lib Crichton calling Jool and Sikozu "Princess" in Farscape).
