Easy Chicken and Rice Soup

Super easy homemade soup that goes really well with thick crusty bread (I'm partial to sourdough myself). And, yes, you can totally make this in less than an hour.

EDIT: Yeah, this was totally taken from i_rose_i_roared's mom's soup that I had once. It's pretty close to her recipe, I think.



Yield: 3-4 servings
Prep Time: 10 minutes
Cook Time: 35 minutes

Ingredients:

1 10 oz. can of chunk chicken
2 carrots, peeled and diced
1 small onion, diced
1/2 cup of rice
1 1/2 boxes of Chicken stock
3 cloves garlic, minced or pressed
Generous pinch of kosher salt
Ground pepper
2 tsp. Paprika
2 tsp. Thyme
2 tsp. Oregano
1 Bay Leaf
Olive Oil
Water to add to the soup if it starts looking too thin

Procedure:

1. Saute carrots, garlic and onion in olive oil in soup pot on medium heat until soft. Add chicken and spices to the pan and stir to coat.

2. Add chicken stock, rice and bay leaf to pot and simmer for 30 minutes, or until rice is cooked. If it starts to look too thin, add water as necessary. Remove bay leaf and serve.
