And a big hell yes, prep time is killer. I probably couldn't scrable eggs in 20 minutes. lol

Then cleaning up afterwards takes a long time too. Everything takes me a long time. It might be because I am required to think about cooking. I used to do it on autopilot. These days I forget what I'm doing or wander off or have to sit down because some body part is hurting. Cooking is a helluva process. Today I made potato soup in the crockpot. Easy enough, now I just need to find about 20 more people to eat all of it.

As for congac in the dish; it is in addition to the half a bottle of wine she uses. Here's the recipe:

LOL, if I could scramble 20 eggs in 1 minute, I still couldn't match the prep time given for the recipe I made. Anyway, thanks for the Ina Garten one.

It looks a lot more realistic than mine and, if things start to drag a bit, a good stiff pull of the Cognac might help. I mean, nobody's gonna know if you used all of it in the stew, right?

Hoping today is a good day for all of us "young at hearts..."

That's a problem with most of the recipes I'm running into these days. They all seem to be determined to make enough food to feed a small army or a football team.
I found a really lovely recipe for baked rice amongst the recipes by the Food Wishes guy. It's simple to make but I wind up eating it for the next week for crying out loud!

And to think I once laughed at the idea of grown people using easy bake ovens to cook food for themselves! I'm not laughing any more. Come to think of it, easy bake ovens are the one toy I never see at the Goodwill stores here in town!
I have to admit I love the idea of a freshly baked chocolate cake just big enough to serve two people.

It is challenging for sure to cook for just two people. I end up freezing serving size leftovers for later. I'm going to declare a week of eating that up soon.
