I don't have five top food experiences, but I do have a funny one to tell: One day I was visiting my BFF Lisa in Texas. We went to this fancy breakfast buffet thing and it was delicious. I had a bunch of those little sausage links on my plate, and I went to cut one of them, and part of it flew off. I looked in the direction it went, and there was a guy sitting there, and his pocket was pouched a little, and I couldn't see the sausage anywhere, so I was *convinced* it had gone in his pocket, and he was going to reach for his keys or something and pull out my sausage and I about died laughing. I couldn't even explain to anyone why I was laughing so hard I was crying and not making any noise, because I couldn't breathe. Sadly, in the end, I found my sausage on the floor.

Cream cheese pound cake

1 ½ cups unsalted butter, room temp
1 pkg cream cheese, room temp
3 cups sugar
6 large eggs
1 teaspoon vanilla
3 cups all purpose flour
2 teaspoons salt

1 - Preheat oven to 350. With electric mixer, beat butter and cream cheese until smooth. Add sugar; beat until light and fluffy, about 5 minutes. Add eggs one at a time, beating well after each addition. Mix in vanilla. With mixer on low, add flour and salt in two additions, beating until just combined.

2 - Generously coat two loaf pans (or one bundt pan) with cooking spray. Immediately pour batter. Tap pan on work surface to eliminate any large air bubbles

3 - Bake until golden, 60-75 minutes (add 5 minutes for bundt pan).

4 - Cool 10 minutes in pan. Turn out cake/s. Cool completely.


Toffee Blondies

½ cup unsalted butter, melted
1 cup packed light-brown sugar
2 large eggs
1 teaspoon vanilla extract
¼ teaspoon salt
1 ½ cups all purpose flour
1 cup toffee bits

1 - Preheat oven to 350. Line bottom and sides of 8 inch square pan with aluminum foil with bit of overhang on two sides.

2 - Cream butter and sugar until smooth. Beat in eggs, vanilla and salt. With mixer on low, add flour and beat until combined. Stir in toffee bits by hand

3 - Spread batter in prepared pan. Bake until golden, 30-35 minutes. Remove from oven and cool completely in pan.


Creamy Lemon Squares

20 reduced fat nilla wafers, finely crushed
½ cup flour
¼ cup packed brown sugar
¼ cup cold margarine
1 pkg Neufchatel cheese, softened
1 cup sugar
2 eggs
2 tbsp flour
3 tbsp lemon zest
¼ cup fresh lemon juice
¼ tsp baking powder
2 tsp powdered sugar

1 - Heat oven to 350. Line 8 inch square pan with foil, ends folded over sides. Mix wafter crumbs, ½ cup flour and brown sugar in bowl. Cut in margarine with pastry blender or 2 knives until mixture resembles coarse crumbs. Press onto bottom of prepared pan, bake 15 minutes.

2 - Beat Neufchatel cheese and sugar with mixer until blended. Add eggs and 2 tbsp flour, mix well. Blend in 1 tbsp lemon zest, lemon juice and baking powder. Pour over crust.

3 - Bake 25-28 minutes until center is set. Cool. Refrigerate 2 hours. Sprinkle with powdered sugar and remaining lemon zest.


Caramel pecan cheesecake pie

1 pkg cream cheese softened
½ cup sugar
4 eggs
1 tsp vanilla
1 unbaked pastry shell (9 in)
1 ½ cups chopped pecans
1 cup caramel ice cream topping

1 - In a small bowl, beat the cream cheese, sugar, one egg and vanilla until smooth. Spread into pastry shell, sprinkle with pecans.

2 - in a small bowl, whisk remaining eggs. Gradually whisk in caramel topping until blended. Pour over pecans

3 - Bake at 375 for 35-40 minutes or until browned. (loosely cover with foil after 20 minutes if pie browns too quickly. Cool on wire rack for one hour. Refrigerate 4 hours or overnight before slicing


Chocolate Meringue Pie

9 inch pie crust
1 cup sugar
3 tbsp unsweetened cocoa powder
2 tbsp flour
1 tbsp plus 1 tsp cornstarch
1 can evaporated whole milk
3 large eggs separated
3 tbsp unsalted butter, cut into small pieces
1 tsp vanilla

1 - Preheat oven to 375. Place pie crust on rimmed baking sheet. Bake until crust is golden, about 20 minutes. Cool completely. Set aside.

2 - Put a fine mesh sieve over a medium bowl, set aside. In medium saucepan, off heat, whisk together 2/3 cup sugar, cocoa powder, flour, and 1 tbsp cornstarch. Gradually whisk in evaporated milk. Whisk in egg yolks.

3 - Place pan over medium heat; whisking constantly. Cook until the first large bubble forms, about 5 minutes. Reduce heat to low; whisking constantly, cook 1 minute

4 - Immediately pour mixture through prepared sieve into bowl. Stir in butter and vanilla. Pour warm filling into baked crust; cover surface directly with plastic wrap. Chill at least 2 hours and up to 1 day.

5 - Preheat oven to 450. Using an electric mixer, beat egg whites, remaining 1/3 cup sugar and 1 tsp cornstarch until stiff peaks form. Spread meringue on top of filling, right up to the edge of the crust. Bake until meringue is lightly browned, 5-7 minutes. Serve immediately.

  • Seattle - my city is awesome. You go a half hour east and you're in the mountains, a half hour west and you're at the water. There are tons of things to do and places to see and the weather is usually agreeable and the people are awesome.
  • Disneyland - I am the world's biggest kid and love all things magical and Disneyesque. Well, not all things, but most. Disneyland is fun and full of silliness and I get to be a dork without reservation.
  • By the water - this is vague, but it's also true. I love water and even being by a stream or a creek or a pond or something is kind of soothing. I've almost always lived near water (given that my dad was in the Navy, this is not shocking) except for when we lived in Texas and in the middle of the Mojave desert. Extremes, don'tcha know.
  • Alone - I'm an extrovert by nature, but I have extreme moments of needing to be OMGBYMYSELF. This does not jive well with having children, nor working in an office of 50+ women. Usually I use the internet for this. ::pets it::
  • Lost - in a good book or in writing
