Apparently, Welshcakes are a real thing, not just what I call Matthew and Ioan. Who knew?
Anyway, I made some using a recipe stolen from
inlovewithnight's friendsfriends, and they turned out yummy.
1 cup self rising flour (or 1 cup all purpose flour + 1 1/2 tsp baking powder and 1/2 tsp salt)
6 Tbsp butter
1/3 cup currants (Not a currant fan, so I used chocolate chips. Mmmmmmmmmmmmmmchocolate)
pinch of salt
6 Tbsp powdered sugar
1 egg
milk just to mix
1/4 tsp cinnamon (or alternate spice of your choice)
Cut butter into the flour. Add the dry ingredients then the egg and milk. Mix into a stiff past. Roll out, cut into rounds and bake on griddle over medium heat. When cold, sprinkle with powdered sugar
I mixed the batter with a whisk on my mixer and just used extra flour to roll it out. I didn't have a biscuit cutter, so I just rolled balls and flattened them to about 1/4 inch. Baked on my electric skillet and mmmmmmmmmmmmmmmmmmmmm. Yum.
But I bet they're still not as tasty as Matthew and Ioan would be.
