Ham, Split Pea, and White Bean Soup

Jan 06, 2007 20:38

I have uploaded pictures of the whole process of making this homemade soup. If you're curious to see pretty much step-by-step how I made it, view the slideshow here.

I must say I'm very disappointed with the crockpot. Perhaps because I didn't soak the beans, but they weren't cooked at all even after 5 hours in the crock pot on HIGH. So I had to finish the soup on the stove in my stock pot. In any event, it turned out very tasty. A great way to use up the leftover ham.

INGREDIENTS:
cooked ham (of course), cubed
sliced mushrooms
chopped carrots
chopped green bell pepper
chopped sweet yellow onion
chopped leeks
dry white beans (great northern)
dry split green peas
bay leafs
chicken broth
water
thyme leaves

Hint: soak white beans until tender before cooking! Or don't use white beans at all (I love them, though).

We have plenty of leftovers for tomorrow. :)
