I'm addicted to this
recipe for creamy avocado pasta lately. It's so easy and quick and yummy, and I love avocado so much. I don't use a food processor, I just use a fork to cream the avocado because it's easier and more rustic that way and still tastes just as good. (For a single serving, I use half an avocado and eyeball the rest of the ingredients. A little avocado goes a long way for the sauce.)
I'd like to use wheat pasta but I still prefer the regular pasta even though it's bad for you, relatively. But I do add one chopped tomato to the avocado sauce, and I lay the hot pasta first on a bed of spinach (and sometimes also arugula), and mix it together to slightly wilt the greens, before I toss with the avocado sauce. It's very healthy and again, so so yummy.
I also like to grate parmesan to mix into the sauce, which is not as healthy but is more delicious. Drooling now.
