I find three is useful -- a 1 cup, a 2 cup, and a 4 cup. I use the one cup for measuring liquid ingredients for recipes, the 2 cup for measuring water then rinsing and soaking my rice, and the 4 cup is awesome for making pancake or waffle batter and pouring it straight in the pan.
I have the 1 cup and the 2 cup. Also love my silicone rubber spatulas. good for just about anythign baking as well as just getting the pb out of a jar or whatever. I dont think you need a real fancy mixer for a starter kitchen. where are you moving? im looking for a place to move to.
