It is really simple. Instead of using http://mail.google.com you should use https://mail.google.com.

Note the addition of the "S" after http. It is THAT simple... of course your email itself will be unencrypted. This method will only encrypt the email from your browser to their server. After that, it is cleartext for all snoopers to see; email is like sending a postcard.

If you really want to encrypt your Gmail email, then try using FireGPG for Firefox.
