Kelsey is at the
Bishop's Ball. It's a formal dance held at the
cathedral in Dallas. She left with the youth director and a couple parents (Michelle and Chuck - both good friends of mine) and about 6 other kids, at 1:30 today. After the Ball, they are going to a lock-in with 40 other kids from various Episcopal churches at
this place. I made some oatmeal chocolate cookies for her to take on the trip (Dallas is a three hour drive away) and share and boy, did they come out good. That recipe is a keeper for sure. I used milk chocolate chips instead of semi sweet - I think they taste better in oatmeal cookies.
I also made - from my huge stack of recipes I want to try this week that I pulled out of my newly organized files - chicken chilaquiles for dinner. OMG. Those were WONDERFUL. MMMM, chilaquiles. I had never heard of them till we went to Cancun and they had them on the breakfast buffet in one of the restarants in the time share....I was so delighted to find the recipe. I would have never known what it was before and glossed right over it, but now that I know what they are I want to know how to make them.
Kip and I watched "Open Range" and then "Jeremiah Johnson" on AMC and at 8:30 we looked at the clock and couldn't believe it was only 8:30 - it felt like 11 o clock, I swear. He said he was thinking of going to bed! and I said I would NOT be going to bed and he snorted "of course not." (I'm a night owl, he isn't.) I said, no WAY am I going to sleep at 8:30. I can just see that. I went to bed at 10:30 the other night to keep him company and woke up at 5:00, wide awake. That's manageable, but if I went to bed at 8:30 I'd be up at 3:00 and then by 11:00 in the morning I'd be exhausted. Heh. When I was doing Mary Kay I joined her "5:00 club". For one day. I got up at 5:00, got some stuff done, and by lunchtime I took a nap that lasted till dinner and was totally trashed out. It's just like daylight savings - it doesn't matter when I go to bed or what time I get up or if it's dark out yet or not. I am going to get a certain amount of sleep one way or another and if you put me to bed too early or wake me up too early there WILL be bizarre repercussions! Heh!
I'm trying to resist the urge to make a cup of cocoa. The chilaquiles were from Cooking Light and a really BIG square of them had only 311 calories - that, plus my delicious and low fat Spanish rice and some guacamole and homemade baked chips probably ended up around 6 to700 calories which is okay because I skipped breakfast.
But I don't need any more calories today. Nooo I don't.
