Impromptu Tuna Salad

Sep 16, 2011 20:41

I decided that I wanted a tuna salad sandwich for dinner.  I put the (gluten free) bread into the toaster with a slice of sharp cheddar on top and set it going.  Then I discovered I was out of mayonnaise.  I cast about for an alternate course of action, but the cheese was melting and the cats were eyeing the tna can with great anticipation.  I decided to sally forth.

What I did:
1 3 oz can water packed solid white albacore tuna (juice reserved for cats)
1 splash of olive oil (maybe a tablespoon?)
~1/2 tsp garlic
~1/4 tsp parsley
~1/4 tsp dill weed
~1 tsp lemon juice

I threw all of the above into a bowl and stirred it all together and then served it (to myself... HRH hates tuna) on cheesy toast.  The result was surprisingly tasty!  I may never need mayonnaise in this context again!  The lemon and dill really cut the fishy flavor, and the garlic and lemon really complimented each other.  The parsley may or may not have helped, but I think it may have pulled everything together.

In any case, not really a recipe as a different (ad hoc) approach to tuna sandwich dictated by an emergency mayo outage.  Yum.
