German Oven Pancakes

When we found out we were pregnant, one of the names I lobbied for pretty hard was "Viola," sort of to name her something reminiscent of my great aunt Violet without naming her exactly the same thing.  HRH wasn't into that name suggestion, so we named her after my grandfather (her brother) instead.  I grew up hearing stories of Claude and Violet, and their kids Waddy (Bob) and Nancie, and about the magically green land where they lived, Portland.  The first year we were up here, we braved the horrible, horrible (HORRIBLE) Thanksgiving weekend drive down there and had Thanksgiving dinner with them.  It was delightful, but we've never braved the holiday drive again.  We've had a nebulous plan to get down there for a long weekend "sometime soon now" for... 5 years?  Nancie is in Spokane and I haven't seen her since I was about 5.  So near, and yet so far.

A couple of weeks ago,  I heard that Violet had gone into hospice care with pneumonia.  I told my mom that I didn't think that we'd add anything to the situation by rushing down there, but that if, by some miracle, she pulled through, we'd take the iBoo down there at the first opportunity.  She didn't pull through, and though they're not going to have a funeral service, they'll have a party to celebrate her memory this summer.  Which we won't miss.

Today, I was cleaning out the back room, and I found a little notepad where Violet hadd written down the recipe for the German Oven Pancakes that she made for us the last time we visited her.  So, without further ado, I give you:

German Oven Pancakes (a small Violet tribute, words and emphasis hers)

- Beat 3 eggs with a fork to blend
- Slowly add 1/2 cup of flour, beating constantly
- Stir in 1/4 teaspoon of salt, 1/2 cup of milk, and 2 Tablespoons of melted butter
- Grease a 10" skillet (ovenproof) [Note:  Violet used a cast iron skillet for this] and pour batter into cold pan
- Place in pre-heated 450 degree oven
- Bake 18 minutes, then reduce to 350 degrees for 10 more minutes
- Serve with melted butter, powdered sugar, and a lemon wedge; or with heated frozen strawberries or honey butter; lingonberry sauce; or maple syrup (We love these for a late dinner)
