As you may know, I have a thyroid problem. Most of the time, I take a pill every day to replace the thyroid hormone my body isn't producing, and dont' think too much about it. Availability in Portland of GF flours, baking mixes, and prepared foods is AMAZING. It's more expensive, but it's much better tasting and consistency-wise than could be acquired even two years ago. Dunno what you can get there. The pasta is still uninspiring, though. GF does cake-y really well, but flakey (like a croissant) not nearly so well. BEWARE soy sauce; for some reason, most kinds have gluten. Have to be careful of gravy and other sauces when you eat out; I'm overcareful because I'm not a cook and have no idea what kind of sauce a cook might put flour in to thicken it. You'll do much better at that part.
Giving up beer was no hardship to me, of course, but it may be worse for you. They make GF beer, but I'm told it's not great. Distillation voids all gluten, so liquor of all kinds is still fine.
My advice? Try it for one week. If going GF will actually help, you'll know very quickly.

Obviously, Your Mileage May Vary; if this had happened to Dylan's mom, she'd be in her bed for two days. But if you can be pretty careful for five days running, you should know something. How long you in Portland for?
