Ingredients:
Pre-heat oven to 420 degrees
Filling
1 1/2 c shredded cooked chicken breast
1/2 c frozen peas
1/2 c carrots sliced
1/2 fresh mushrooms
1/4 c onions diced
1/4 c chicken broth
2 stalks of celery - cut
1 potato - peeled and diced
1 can of cream of chicken soup
1/4 c milk
1 c cheese - diced
*combine all above ingredients and simmer (and cover) in frying/sauce pan for 5-10 minutes without loosing too much moisture, but getting the veggies and potato to soften a little bit). let cool for 5-8 minutes stirring occationally.
Crust (divide ingredients in half and make top and bottom seperately)
3 c flour
4 tsp white sugar
2 tsp salt
1 c vegetable oil
4 Tbs milk
*divide ingredients in half and make top and bottom seperaately. mix all (1/2) ingredients together and press into pie pan. mix other half of ingredients together and press into circle on a flat surface (like a cookie sheet). pour cooled filling on top of uncooked crust that is in the pie pan. place flattened crust (from cookie sheet) on top of filling. pinch the edges of the crust together.
*place in oven for 30-35 minutes. watch crust done-ness...don't overbake!
