Life at the moment is crazy.
Last week we completed our cooking presentations, held an easter bake sale after only two days of preparation (and I had to be the second in charge of the whole thing..!), wrote a test and an essay, and I had a heart attack thinking that portfolios were due.
This week was slightly more mellow, though I'm equally as worn out simply from anticipating the next few weeks to follow.
Skills is next week, two days of horror that I keep feeling I am grossly unprepared for. My portfolio also must be completed, or at least close to being finished. We're doing wedding cakes next week too, which is going to be a nightmare. I came up with a design for a navy themed wedding cake that my group was cool with, but I don't think any of us are looking forward to working with fondant in that humid kitchen.
Gluten-free products, gluten free starters, advanced natural starters, pumpernickle and rye, and a wrap up on theory will be next. Then the crazy written exam. Small business presentations will take two days, then mock job interviews. One day we're kicked out of our kitchen for some plated presentation set up that the cooks need to do. Through all this time I will be packing for the big move, and working on saturdays so we can eat for the first month.
How're we gonna do all this effectively in less than three (school) weeks?!
My stomach is so tied up over skills I can hardly eat lately. I crawl into my bed at night seeking refuge from the day, but instead I lay awake for three hours, putting up with my brain buzzing about this that and the other thing. i come home so exhausted that at times I can't help but crash half way through the day, which only makes my night time sleeping habits even worse.
Despite all the chaos, I'm managing. I know it'll all be over soon and I'm doing really well staying in control. I've been medicating with chocolate. Mini eggs are my best friend right now.
Wish me luck in skills, guys! If you have any fantastic bread recipes please tell me. I haven't figured out what my "freelance" bread is going to be yet...
