I wanted to make cookies (or something) with Alex and I remember LOVING when Gramma let me help make chocolate macaroons. (Well... that's what she called them... they're kinda like a "Haystack cookie" Kinda.
SO me thinks to myself. "Those would be perfect!" except of coarse they are made with evaporated milk and a whack of chocolate chips and corn flakes.
BUT... again me thinks "Ya but... I'm sure I can make gooey chocolate stuff without milk and anything goo'd together with chocolate is bound to be good"
This is what we came up with after digging ingredients out of the pantry:
1C slightly chopped walnut halves
1.5 C Slightly chopped pecans
2 C Shredded coconut (WHEN we do this again it will be the long shredded stuff not the short shredded)
1.25C rolled oats (not quick oats)
3 squares Unsweetened bakers chocolate
2Tbsp Butter
1.5 C White sugar
1/2C So Good Soy (plain)
1tsp Vanilla
1/8 tsp Almond Extract (accidentally slopped more... it's a little strong for my liking but... still yummy)
Mix the first stuff, melt the second stuff, stir together, spoon in mounds on parchment, Cool. Eat
Never said these were calorie free... but they are yummy :)
