1/3C Sorghum
1/3C Millet
1/3C white rice flour (that I might not have put in grrrrrr tooo many white powders in the bowl when Daniel and Megan got home!!!)
1/4C Potatoe Starch
1/4C Tapioca Starch
2tsp xanthan gum
1/2tsp salt
7/8C water
2tsp Agave nectar
1tsp sugar
1tbsp yeast
2 eggs
1tsp cider vinegar
2tbsp EVOO
Trying for a thicker flat bread so I made a lighter dough (more H2O) and spread it thicker in a smaller jelly-roll pan.
It's rising... will update with the results later.
Edit: Note to self.... Wait a little longer before taking it out of the oven.... This version rose nicely while cooking and i took it out when it was just starting to brown. 2min latter it was looking rather flat and possibly gummy so... back into the oven it went. I just took it out and sampled a corner and it seems cooked now but no where near as fluffy as it could have been if I'd just waited 10min :( Tasty though and will make fine sandwiches so all is not lost.
