Choc-centered Muffins
Preperation time = 10 minutes
Total cooking time = 15 minutes
makes 15 muffins
ingredients
2 cups ( 250g ) self raising flour
1/2 cup ( 125g ) casting sugar
120g grated milk chocolate
2 eggs
2 teaspoons vanilla essence (try orange if you fancy it, I prefere vanilla)
80g unsalted butter, melted
1 cup sour cream (sounds weird but trust me on this)
100g dark chocolate, cut into squares
2 tablespoons choc bits (feel free to go a bit overboard with this)

oven preheated to 180 degrees C
15 half cup size cake cups
mixing bowl
wooden spoon or electric beaters
wire cooling rack
(If you don't have all the tools needed, improvise! If you don't have cake cups, try coffee mugs)
1. Make sure the ovens preheated to 180C.Brush melted butter or oil into the 15 1/2 cup cake cups.
2. Place flour, sugar, chocolate, eggs, essence, butter & sour cream into the mixing bowl. Beat it all up until its all mixed together, then beat it some more.
3. Spoon half the mixture into the cake cups from step 1. Put a generous chunk of chocolate in the center of each one, then top with the remaining mixture.
4. press choc bits onto the top of each muffin (try glacied cherries if your feeling fruity).Bake in the oven for 15 minutes or until puffy and lightly browned. Serve them warm so the center is still gooey and mouth watering.
