Few things make me happier than a big bowl of stew. It's the easiest and tastiest way to fill my tummy, eat healthily, and remind me of home and my favourite pregan meal: Mum's beef stew. Some day I'll remember to make suet dumplings to go with it, too. I don't have a proper recipe, but here's a rough guide:

Take a large saucepan and fry a large onion with some garlic, then add carrots and mushrooms and cook until the onions are translucent. To this, throw in chopped swede, turnips and potatoes, pour in enough vegetable stock to cover everything by about an inch. Stir in some tomato puree (sometimes I just use leftover pasta sauce - so long as it's thick and tomato-y, it's probably good), plenty of vegan Worcestershire sauce, paprika, some liquid smoke (or used smoked paprika instead), a little bit of molasses and bring to boil. Once boiling, reduce heat to a very low simmer, put on the lid, and leave to slow cook for between one and three hours. Season with black pepper and salt to taste.
