Chewy, thin cookies.

I've spent many, many hours trying to perfect the chocolate chip cookie. For me, they should be thin and chewy, crisp around the outside and chewy in the middle, and taste of molasses, vanilla and hints of caramel. I've nearly cracked it! I also adapted the recipe to make a tasty ginger molasses cookie. Again, it needs tweaking, but I'm pretty happy with them as trial batches.
