Sunday

Rachael Ray's Chicken & Dumplings

Monday

Parmesan crusted haddock, brown rice, steamed veg (broccoli or green bean)

Tuesday

Mom's Chicken Cacciatore, side salad, pasta and probably bread - carbo loading HELL YES!!

Wednesday

Lefotovers

Thursday

Ina Garten's Herb marinated pork tenderloins, mashed potatoes, veg

Some might say we are heavy on the meat. Unfortunately my husband is very much a meat and potatoes guy. Attempts to incorporate meatless meals are met with a sincere "This is GREAT! But you know what would make it better? Chicken or Beef or Fish." We are making strides by using fish (this week it's Haddock - on sale!) but we also like salmon and tilapia, but also by making meat more of a side dish and not the main feature.

I LOVE LOVE LOVE menu planning. It makes life so much easier - it takes away that panicky 5:30 PM feeling of "Holy crap, what are we going to have for dinner?!" And because I've planned ahead, cooking has become pleasurable. I know what I'm making and that I have everything I need to make it. Last week I forgot to plan and what a PITA. One night we wound up having frozen chicken nuggets for dinner because it was the quickest thing I had on hand. So back to planning and enjoying my meals again.
