My friends at Stronghold's Old English Faire clued me in to C.T. Treats Custom Granola, which, aside from being yummy (and addictive enough to be nicknamed "granola crack"), provides an array of options with those who have to consider food allergies and intolerances, sensitivities to, say, artificial schtuff, or need a gluten-free diet. Considering the number of people I know for whom those are issues.....
