My gift to you this Halloween is my favorite crock pot recipe in the whole world.
Religious Experience Lasagna
Ingredients
- 8 curly-edged lasagna noodles, broken in half
- Salt & pepper
- 15 ounces of ricotta cheese
- 1 1/4 cups Parmesan cheese
- 1/2 cup fresh minced basil
- 1 egg
- 24 ounces of spaghetti sauce
- 1 lb Italian sausage - remove it from its casing (we use sweet sausage)
- 4 cups mozzarella cheese
- you read that right - there is a reason this makes 4 nights of food for us, easy
Recipe
- Line your crock pot with aluminum foil. You will thank me for this one later.
- Boil and cook your lasagna noodles. Make sure you have 16. Drain, rinse them.
- Mix the ricotta, a cup of the Parmesan, basil, egg, 1/2 teaspoon of salt and pepper.
- Put 1/2 cup of tomato sauce in the bottom of the slow cooker.
- The order is this: 1/2 cup tomato sauce, 4 noodles, 9 tablespoons of the ricotta mixture (just drop the spoonfuls in - don't bother spreading that shit around), 1/3 of your sausage mixture, 1 cup mozzarella, 1/2 cup sauce.
- Repeat this 2 more times. Now you should be out of ricotta mixture, down to 4 noodles, 1/2 cup mozzarella.
- Final layer: last 4 noodles, topped with the last 1/4 cup of sauce, sprinkle with the 1/2 cup of mozzarella and the tiny bit of Parmesan.
- Cook this nectar of the gods on low for 4 hours. Let it cool for 20 minutes, serve with a salad and other veggie things.
Cost (assuming you have a full spice cabinet)
- Makes 6-8 servings depending on how starving you are
- Costs ~$12
- = ~$1.50-2 a person
- This stuff is so. good.
Note that we eat 2 or 3 veggie-only dinners when we finish this one off because it is cheese-city. But eat a lot of greens with it and you'll be okay - it's a treat!
