The problem of leftovers

Every Friday I go to my parent's house for dinner and every Sunday I go to my MILs.

(Everyone wants a piece of me.)

But anyway, my MIL never learned how to cook for the 5 people who show up regularly.  Cook for 20? No sweat, she can do it with one hand tied behind her back.  But just a few, her proportions get all wonky.  This was a "sauce week" and there is easily 1 1/2 quarts of tomato sauce with sausage & meatballs leftover.  This is food that she already froze once so technically, it cannot be frozen again.

Unless you are me.  I already did one 2c container.  The rest is so loaded with meat, I couldnt get the ladle in.  I want to use some of it up and see how the rest turns out.

But the question is what to do with the rest.  I made manicotti with whole wheat tortillas a few weeks ago and was surprised how quickly it vanished into the maws of Child and DH.  He was awake and surprised me by eating.  And then going back for seconds.

Anyway, I was considering making it again, but it doesnt use the meat, so we would still have all of this meat leftover.

I could make lasagna and crumble the meatballs.  But that's a 50-50 proposition on the Child.  I've served to rave reviews and then the next day the exact same leftovers were suspiciously poked at.

Pizza?  In a child household you already eat too much of it.  We had it for lunch on Saturday.

Why not just put it on pasta?  Child likes fresh tomatoes but not really tomato sauce.  Unless its on pizza.  Its the exception that proves the rule with him.  He's actually not good with most cooked veggies.  But since I can get him to eat almost anything raw, we let him slide.  Its just so easy to let him substitute baby carrots or cherry tomatoes for whatever other veg we are eating.  He still gets his veggies and I dont have a fight.  Compromise, thy name is parenting.

Mousakka?  I have frozen eggplant.  But its just too disheartening to put all that work in to have him reject it on principle.  Maybe I'll save that option for my lunch.  (No cream sauce but a smattering of cheese on top)

I think I'm going to stick with the tried and true manicotti.  Meatballs on the side.  Dont mess with a good thing.
