Gnome and KDE are desktop environments. Linux nerds would argue for hours that this is an understatement, but as far as I'm concerned all I (or you) need to know is that KDE looks like this:

They come with different software installed by default and my experience is that most people prefer whichever one they used first. The only reason there are two (there are actually others, like Xfce) at all is because they had a philosophical disagreement in 1997, and when the source of the disagreement went away in 1998, they just kept going (this is on the Gnome wiki). Linux people are nuts ;)
