The cheap dollar-store Lemon Pepper seasoning I used was pepper, salt, and citric acid. Better lemon pepper seasoning is lemon zest (grated lemon peel), mixed with crushed peppercorns. Different brands use different blends. Some do add sugar, and some people make their own lemon-pepper by mixing powdered lemonade drink mix with ground pepper.

A fancy medieval alternative to pepper was Grains of Paradise (Aframomum melegueta). It has a similar firey taste to peppercorns or long pepper, but most modern cooks don't have GoP around their kitchen. Cubebs are similar, but they're more fruity and probably not right for this dish.

For your friend, a light sprinkle of ground coriander could give it some oomph (assuming she's not also allergic to cilantro). It doesn't taste quite the same as pepper, but it keeps it interesting. Or ground cumin might work, for a slightly different taste.

The pepper adds a piquant note. When these vegetables are roasted, they become sweeter. The olive oil and the sharp flavors of the pepper and citrus balance the sweetness, and make it a more savory dish. Salt helps too; you can check for salt at the end and add a little salt if the dish is still too sweet.

One tip - try not to overcook it, or the beets will get too juicy and stain all the veggies purple. They still taste good, it just looks weird. Good luck!
