So beckyaya introduced me to the
what_a_crock community on LJ and it's so much fun! I have to say, I'm really obsessed with our crockpot now. It's such an amazing contraption, and it's been incredibly useful when we work all day on the house and then come home to a ready meal. I love walking into my house and having dinner ready.
My first recipe was a pot roast which was far too greasy. But I've made chicken n dumplings, a pork roast, and our Thanksgiving Stuffing and all of these recipes have been delicious. Once we get through all our turkey day leftovers, my next experiment will be chili. So exciting!
My only complaint so far is that the crockpot recipes I've found have used a lot of processed, high sodium foods. The chicken required two cans of cream of chicken soup and jiffy mix, and the pork roast asked for onion mix. I understand that the point is convenience though. Since we only use these types of ingredients once or twice a week, and usually stick to fresh foods I guess it's not so bad. And I always try to add in extra veggies on the side, or in the meal to make it healthier.
