Jolofi [Thai] Curry

I fell in love with this recipe when a teacher brought it to a potluck and everyone HAD to have the recipe. It's FAST making its way around the world!!

(1.) Fry in veg oil:

2 onions, finely chopped

Then add:

1 red chilli chopped finely
3 stalks of lemongrass, beaten with a rolling pin (I made it to awesomeness without this - but I added some fresh ginger. Eh, it's all good)
6 cardamon pods
1 Tbsp mustard seeds
3 Tbsp red Thai Curry paste

Fry for 4-5 minutes.

(2.) Add:

1 small butternut squash OR 1/2 medium pumpkin cut into small chunks
2-3 potatoes cut into small pieces (I don't peel, I just wash 'em)
1 can of chickpeas w/o the juice

Stir to coat.

(3.) Add:

1 can of full fat coconut milk (I've tried the low fat stuff - It's not worth it)
2 veg stock cubes
1 handful of cilantro/coriander

Simmer for 30-40 min.

(4.) Add:

2 limes Or lime juice
2nd handful of cilantro/coriander

Serve now!
